Today was our culinary final written and practical. I was given a scenario around a mexican flavor profile and a simple dessert. So basically without giving sounding too egotistical... I rocked it. The chef was totally impressed and so was all the rest of the staff. I made a Posole Mexican Lasagna with Enchilada Spanish Rice. For dessert: my mother's famous Sopapilla Cheesecake. Everyone loved the cheesecake. I couldn't believe how well it went over. The presentation went really well on the plate and aced it with 100%. I was truly thankful and blessed today to feel like I finally did do something right.Tuesday, September 08, 2009
